We need to continue any research that would effect our health long term but it is important to remember that nitrates are found in many foods... A study done by the Agency for Toxic Substances and Disease Registry actually found that vegetables account for 70% of the nitrates in a typical human diet with the remainder of the nitrates coming from drinking water (21%) and then lastly from meat and meat products (6%).
